Sunday 7: I'm Alive

Looking at my last post, it’s been awhile since I’ve been on the blog sharing. Over 2 months in fact. How’s that for consistency? 
Hmpf.

I could say I’ve been insanely busy (I have), and that I’ve been working a lot (I have) and that I just don’t have time (I don’t), but really- I haven’t been making writing a priority. At least not here.

I’ve been journaling my devotions most days and writing some other stuff here and there, but I haven’t been having a 2 hour coffee shop session a couple times a week and I really miss it. I’ve been to El Salvador and back, I’ve promoted with Arbonne, I ran the Cherry Blossom race in DC (bucket list!) and I’ve changed and grown and learned and thought and pondered and haven’t shared a single bit of that here. 
I will catch you up on ALL of those things. Soon. I promise.

But for today, here’s 7 things that are making me happy.
  1. THIS!! Making time in my schedule to pack up my laptop and throw on my golashes and spend a rainy hour on a Sunday writing. I’m back friends.
  2. SPRING. You guys- this winter was hard. Like, I spent countless hours being numbed by Netflix, eating snacks and outgrowing my sweatpants while the bitter cold and wind bore down outside. This was probably the most depressing winter I can remember for quite some time- for many reasons- and I spent a large chunk of the beginning of this year in a funk. Quite like the bulbs sprouting up out of the ground, I feel like I just woke up. And I’m ready to get back into life!
  3. EATING CLEAN CHALLENGE. Just last week I started a 28 day eating clean challenge with Arbonne. It is almost exactly like a Whole 30 – eliminating allergenic foods and focusing on lean protein and lots of fruits and veggies. Can I tell you that I feel like a million bucks? And I also already lost 4 lbs of winter layer? I’m always surprised at how quickly I can slide back into bad habits and the minute I stop I feel better. I am promising myself to REMEMBER that this time and just stick with it. Also, the camaraderie our little challenge group has is amazing. I love swapping recipes and tips with these ladies and hearing about how great they are feeling.
  4. EASTER. A week from today is Easter Sunday. I can hardly believe it’s here! I didn’t give up anything for Lent really, but I am doing a #lentchallenge to read the entire New Testament. It’s been trying. I’m a bit behind. But I’m committed to finishing. It’s been engaging and enlightening to read through the Gospels and about the growth of the early church and I’m learning so much. The Bible is full of so much wisdom and truth and I’m humbled every time I read it and learn something new. God is so good to us.
  5. 84 DEGREES. Yesterday it was 84 degrees. I had the moonroof open, windows down and I was sweating. It was glorious. Enough said.
  6. RUNNING. I just ran the Cherry Blossom 10 miler last weekend. This weekend I got in about 10 miles between Saturday and Sunday. 2 weeks from now is the 1st Half- Marathon of the year and I am just stoked it’s racing season. Training has begun!
  7. COOKING. I’ve been absent in the kitchen for awhile. I’ve made a lot of omelets, salads and mix of healthy take out items or meals of hummus and veggies these past few months. I’ve also ate out quite a bit. Doing this challenge has pulled me back into the kitchen and I’m loving it. I went grocery shopping this weekend and made some delicious and nutritious meals for lunch. I can’t wait till the farmer’s market starts next month and I can really start experimenting.

Speaking of cooking…tonight I’m making T and I Quinoa Power Bowls with grilled chicken- a challenge recipe that mixes quinoa with various veggies such as kale, carrots, garlic and tomatoes  and topped with grilled chicken. Look for a picture on IG. You know how I like to take pictures of my food. J

December Goals and Updates

Hi there.
It's been awhile since I've written about practical things like food and running and goals.
And I reeeeallly need miss it. 
I've been running on empty the past couple of months and not taking great care of myself and doing a lot of complaining about it and not a lot of doing anything about it.
So before I get down the deep dark rabbit hole of winter blues, I'm making goals and plans. 

Things I'm doing the month of December:
- Running everyday: Regular run schedule with 1-2 mile runs on the 'off' days. Check out #rwrunstreak for more info.



- Lift weights at least 2x a week: I fell off of my weight routine and I miss feeling strong and fit. I'm getting back to pumping iron!


I'm looking forward to trying some of these workouts from Nutrionella
- More time with Jesus: I got out of my daily Bible reading, but Advent is a great time to get back on track. Check out this new plan from the girls at She Reads Truth

- 15 min of yoga a day: My schedule right now doesn't allow for much studio time so I'm going to keep up a steady yogi diet of Iowa Powered Yoga Youtube videos on the purple mat. 


- Building my business: I pick the days I work for Arbonne, but I also do a little bit for my business everyday- sending follow-up emails, calling clients to check in and dropping off samples. This month is a great one to get involved (hello Christmas gifts!) and I want to make sure I share the benefits with the people I care about.

- Eating Healthy: Back to the green smoothies and eating more healthy from home. I got L-A-Z-Y and have been experiencing the effects of bad eating. I want to feel good and energetic this month!

- Enjoying the Christmas season: I don't want to be so overloaded that I don't enjoy this beautiful time of year, but I also want to take advantage of all the fun things- baking, creating, shopping, cooking and just being with the people I love.

Foodie Probs (4/31)

Recently, my beautiful friend Emily was diagnosed with Lyme’s disease. She got a nasty bug bite while at a school intensive in Virginia. A mosquito bite that at first appeared harmless swelled to unusual proportions and brought on shakes and just general feelings of uneasiness. After being treated for Lyme’s as a precaution and told that they all but cured it- she received news that she is in fact positive for the disease.

I don’t know much about Lyme’s disease, but I do know this about Emily’s situation. She has unusual and unexplainable pains in various parts of her body. Also, she’s had to see a specialist about what kinds of foods she should avoid as a way to keep her aches and pains to a minimum and allow her body to build up immunity.

Yesterday, she and I were texting about random things. We have both been so busy and out of town at various times we are basically communicating through text right now. Last time I saw Emily we discussed the various foods she could not have, most of them foods that are considered healthy, such as green peppers and bananas.  From what I understand, Lyme’s weakens your immune system. These dietary changes will allow the rest of her body to heal and build up some stamina without expending all her energy on digesting foods. I asked how she was feeling and how the dietary changes were going.

This is what she said, “It [the dietary changes] is emotional however. Surprisingly so. Not being able to eat a fun treat that everyone else is, avoiding favorite restaurants, etc. It’s frustrating, but first world. If that makes sense. Feeling so good though so that it’s gotta be worth it!”

I responded with an ‘Absolutely.’

Last month, I did a 30 day ‘Fall into Healthy Habits’ challenge with Arbonne. The idea was to eliminate certain trigger foods that are common allergens for most people while restoring the body’s PH level. They instructed us to cut the following ingredients for 30 days: wheat, gluten, dairy, peanuts, sugar and coffee.  I ate whole foods- mostly fruits and veggies with the occasional organic meat item rotated in and swapped out my coffee for tea. It was not easy but it wasn’t terribly hard either.

Just as Emily is finding out, dietary changes, although hard, really do yield some positive results.
In our discussion, I mentioned how having less sugar and avoiding gluten and dairy really feel good to my body. I don’t feel as tired or bloated or like I need to double up my workouts to make up for the junk I just ate. I sleep better, my skin looks great and I have more energy. My weight doesn’t fluctuate and my mind isn’t foggy. Overall, I have less mental and physical junk about food.

I’m a self-admitted foodie. I love to cook and will always be the first to try a new restaurant. When I’m out of town, I prefer to eat at local restaurants only- often indulging in whatever the ‘special’ is. At home, I shop almost exclusively local and organic and prefer to eat at restaurants where I know where the food comes from. I’m a food snob and proud of it.

I like to set up dinners or coffee dates with my friends where we can enjoy a sweet treat. Often, I’ll make a treat of some kind, generally healthy,  for my co-workers or my small group.
These are not terrible things. Eating local and organic is good for me, my city and my environment. Sharing time with others while eating is biblical and life-giving, it’s called fellowship.

But often, I will allow myself to ‘cheat’ or eat something downright terrible for me- i.e. Excess sugar in the form of candy, lot of dairy usually in the form of large amounts of ice cream, or something else I will regret later. My excuses can vary: ‘I had a bad day and I deserve it’ (days are only as bad as you make them); ‘It’s a special occasion!’ (when it’s really not); ‘This place has a great drink/dessert/friend appetizer, I get it every time I’m here!’ (reality check- it’s not going anywhere and will be there next time you come).

During the challenge I realized just how much food has become an area of excess in my life.  

LIGHTBULB.

This past year has been a lot about simplifying for me, eliminating the excesses in my life in the form of clothes, stuff and even commitments. What about food? I’m finding that food is and always has been an area of overindulgence for me. If I learned anything during this challenge, it is how MUCH it is much more of a heart issue than a physical one.

I told Emily, “…the more I look at simplifying my life- the more I realize food is an area of excess for me. First world indeed!’

Often, I see food as a way of rewarding or spoiling myself when I should be viewing it as fuel for my body. Eating in a way that sustains my body more fully AND supports my local community is the way I should be eating. Overall, I seem to have a pretty good handle on that.
But what happens when I have a crappy day? Or I’m celebrating with friends?

Right before this challenge started, I was in an ugly place with food. Having had issues with disordered eating in my past, I was stumbling into some nasty habits. I was tracking food constantly, often overeating and then working out excessively or under-eating the next day to make up for it. I thought about food CONSTANTLY. I was constantly tallying calories in my head and deciding how I could indulge and stay under or within my allotment. If I went over, I’d figure out exactly how much I had to up my workout to come out even. It was a vicious cycle.

I quit tracking and took on this challenge as a reset. I found that my body DOES function better without gluten and dairy. I’ve found that I really don’t miss sweets all that much day to day. That freeing up my focus on food allows me to focus more fully on other areas of my life.

Mostly, I found that it’s okay to indulge occasionally. That wedding you’re going to? Enjoy a piece of cake and celebrate with the new couple. Your grandma is cooking you a favorite from childhood? Eat it and celebrate the memories.

But those random cookies from the grocery store someone brought into work? Not worth it. That candy dish you always keep full for ‘guests’? Get rid of it. Those $5 sugar-y lattes you feel you need every day to make it through work? Skip it and find a new job. J

One of the speakers at Influence, Jess Thompson, told us something that was really powerful to me.

Our bodies are not our own.

 They belong to God. He gave them to us. Glorify God in your body by taking care of it. It’s each of our responsibility to keep it strong and healthy, fully equipped to do the work God gave us to do.
I interpret that this way: Don’t struggle and strive to have a ‘perfect body’ as a way of control. But also don’t give up completely and look to food as a means of comfort.

Ultimately, our need to control how we look or to be comforted by what we eat is a sin of self-entitlement.

The world doesn't end if you don’t eat a cookie every day for your post dinner dessert. And it certainly doesn’t end if you don’t have 6 pack abs or chiseled upper arms.

I’m not saying that I have this fully figured out or that I don’t still struggle with both sides of this spectrum.

Day by day, I am learning to view my body as a vehicle through which to do the ‘good works’ that have been planned for me (Ephesians 2:10). I want to support my local community and the larger environment by purchasing local and organic. I want to serve and nourish myself and others in a way that promotes health and positive body image.

It’s really interesting that this conversation was had yesterday and this post came flowing out of it. Just that morning, I took the steps to become an Arbonne Consultant. I have been using their skincare products for a few months now and most recently, their wellness products as part of my #30daychallenge. I am incredibly pleased by their commitment to using pure, safe and beneficial products as well as the culture of promoting total body and mind health and wellness.  

I’ve been praying for a while about an opportunity to use my passion for health to help others and I think I may have found it. Having this conversation with Emily and talking through our reasons for choosing a healthier lifestyle has confirmed for me that taking on this role with Arbonne will be a great step towards my future goals (coffee shop in 5!)

I will always and forever be a foodie. I love breaking bread with my friends and creating memories over a home-cooked or locally prepared meal.  BUT. I will not go forward continuing to use food as a crutch or a comfort in times of need or distress. I will not eat treats every day just ‘because.’ I will not over-exercise or binge-eat. I will eat whole sustainable foods. I will eat when I’m hungry and listen to my body. I will remind myself that each thing I’m putting in my mouth should be fuel to nourish and strengthen my body.  

But when the time is right and that special occasion comes up? 
You better believe I will indulge in something delicious.
And probably full of almond paste.

Meatless Munch: Strawberry Balsamic Vinaigrette

I love salad.
I eat at least one salad a day.
I like them loaded with veggies and occasionally fruit.



I don't like buying salad dressing because often they have a lot of sugar or fat and to me- not worth the extra calories.
I prefer food that makes me full.




I had a few quarts of strawberries so I decided to try my hand at some homemade dressing.
Best. Idea. Ever.

Strawberry Balsamic Vinaigrette
8 ripe strawberries
Balsamic vinegar - 1-2 T (to taste)
Honey 1/2 - 1 T
Cracked pepper
Salt

I put the strawberries (stems and all) into a mini blender.



I added the balsamic and blended until they were liquefied. 
I taste tested to see if it had the right taste I was looking for and also added a little water to make it more liquid-y if need be.

Once it was done, I poured it into a dish and stirred in some honey to sweeten it slightly. 


I also stirred in a little cracked black pepper and salt to taste.

The results were deliciouso!


Maybe the best salad I ever created- mixed greens and spinach, cucumber, heirloom tomatoes, this dressing and a sprinkling of fresh Parmesan. Summer in a bowl!

This week I'm considering a blueberry basil balsamic? We shall see...

Meatless Munch: Roasted Fig & Beet Salad

It's beet season, friends.



I know, I know.
Some of you are thinking, 'Ew! I'm going to skip this recipe!'

But you really shouldn't.

I'll agree, I used to hate beets.
T eats them and convinced me to try them one day. I told him they tasted like dirt and moved on.
THEN, I had roasted beets. Lovely, tender roasted beets with goat cheese and balsamic vinegar.
And I was forever changed.


I needed something healthy to make for Fourth of July festivities.
I had a bunch of beets and saw some figs on sale at the market.
It was a food experiment.
A really, really good one.

Roasted Fig & Beet Salad

5-10 large raw beets, all varieties
1 container figs
fresh thyme
fresh green onion
feta cheese
kale

First off, I cleaned and sliced the beets into rounds.
I placed them on a tray (sprayed with coconut oil spray so they wouldn't stick) and topped with a little ground salt and pepper. Try this kind of salt. It's my favorite one to cook with.



This was my first time cooking with figs, so I had to consult the google.


But basically, you cut them in half. I placed them face down in a tray that had also been sprayed.
I made a little mix of honey and balsamic and drizzled that over the top. I also laid some fresh thyme in the tray and covered with foil. I stuck it in the oven with the beets.

I roasted it all at 350 for about 20-30 minutes. The figs were soft and good to go.



The beets took a little longer. I would cook them until they are easy to pierce with a fork.

I made a little dressing to bring all the flavor together.




I mixed some chopped baby green onion with a few tablespoons fig balsamic vinegar and about 1 tablespoon honey. 


I put a big pile of baby kale in a bowl and topped it with the roasted beets, then figs, then dressing and finally- crumbled feta.


For those brave enough to try the beets...they were pleasantly surprised.

Meatless Munch: TGIF Night Curry

Sometimes I just want something quick and delicious and flavorful.
I keep a lot of veggies around, especially this time of year.
I like coming up with something different to use all my CSA veggies for.

My friend just gave me a couple of cans of coconut milk and I had a couple zucchini lying around so I thought...hmmm...

What can I make with this?

Since it's the end of the week and we all deserve something that tastes more decadent than we probably need and something easy, delicious and healthy.... 
TGIF NIGHT CURRY. 




Here's what you need for the veggies:

Whatever you want.
No really- I always use onion, garlic and peppers of some sort, but then you can add whatever you like.

In my mix this time:

2 stalks of Spring Garlic, chopped
5 Crimini Mushrooms, sliced
1 small Yellow Squash, sliced
1 bunch of Asparagus, chopped (about 12-15 stalks)
1/4 cup Red Onion, sliced

I sauteed those veggies up in about 1/2 tbsp of coconut oil and a little water.



While those are going, you can work on the sauce. 

I love this simple recipe from Andy at Can You Stay for Dinner:

1/2 cup light coconut milk (I used full fat coconut milk from a can because that is what I  had. Obviously the light coconut milk makes it less calories and fat content)2 tablespoons soy sauce (I use low sodium)1 tablespoon rice wine vinegar1 tablespoons brown sugar1 teaspoon toasted sesame oil (I use regular sesame oil...I assume it's the same as toasted?)1/2 teaspoons curry powder (yeah I don't measure and I like curry so I just dump some in and taste test)1 clove garlic, minced (again- no measuring- usually 2 heaping spoonfuls of the minced kind out of the jar if I don't have fresh)1/2 teaspoon Sriracha hot chili sauce (more Sriracha. ALWAYS)2 teaspoons cornstarch 

Put all the ingredients in a saucepan and whisk together. Get it to a boil, then reduce heat and let it simmer until it thickens up- just takes a couple minutes.
You virtually cannot screw up this recipe. It's so good and easy to flavor to the level you want.



While that is simmering and my veggies are sauteeing, I take a veggie peeler and peel my zucchini into strips or ribbon 'noodle's if you will. This is my latest obsession.



You can make brown rice as your base, but I love using a veggie base to save on calories and carbs- plus you can eat an entire zucchini for about 50 calories and you WILL be full. Veggies for the win!

Once your veggies are to tenderness you like and your sauce is ready, turn off the heat to everything. Pour the sauce over your veggies and mix until coated.

Load up your zucchini noodles with a little or a lot. For me- this made 2 hefty servings over half a noodled zucchini. If I was eating this over brown rice - I'd probably make this into 4 servings with a cup of brown rice cooked and divided evenly.

Then I topped it with a sliced tomato just to take a fancy picture.

Meatless Munch: Homemade Larabars (Nicbars- 2 Variations)

Last week I posted this picture on Instagram and Facebook:


I got quite a few requests for a recipe and because I love ya'll so much- I am delivering on that request. :)

I got inspired originally by this post from Treehouseohm on Instagram a few weeks ago:


I didn't want to buy anything and figured I could use up what I had lying around to make something similar.
And since I didn't think this would actually turn out into anything good...I didn't take any pictures.

Lesson learned.
I made a second variation just so I could capture it in film. :)

Homemade Nicbars
Makes 8

20 seedless dates 
1/3 cup raw almonds
1/3 cup pepitas
2 tbsp peanut butter (I used extra crunchy because that is what I had on hand)
1/3 cup dried cranberries

Throw all this in a Ninja or a blender until crumbly.
Dump in a bowl and add some vanilla (about 1-2 tsp) and top with whatever other seasoning you like.I used a little cinnamon and splenda mix that I keep around for my toast. 




Then I pressed them into a small pyrex dish and froze them until firm- an hour or two.
Then I cut into 8 squares and put into baggies for easy lunch packing.



And at 136 calories they are the perfect pairing with a piece of fruit.

Nutty Nicbar

15 seedless dates
1 cup almonds (grind these first)
1/3 cup cranberries
2 tbsp smooth peanut butter
1 1/2 tbsp honey

I didn't add any extra sweetness to these babies. Just pressed into a pan and froze.
These also serve 8 at 170 calories each. They are a little thicker due to the extra almonds. 

These definitely are reminiscent of a Larabar- maybe not as moist, but same idea- a few whole food ingredients.
What I love about this type of snack is you can change it up with whatever you have on hand.

March Recap & Fashion Fast Update

It's April!
Winter is over!
Well, sorta.
This is Iowa.


We definitely had more sunshiny days versus cold ones and I'm glad to say things are finally turning green with the rains of this month.
Even though the rain never stops.
I'm not complaining.
Sorta.

March came and went so fast. I literally blinked and we were 2/3 of the way through the month.
However, I did manage to meet some of my goals:


- Run 100 miles this month: I made 111 miles in the month of March! This turned out to be a goal that kept me sane during this busy month. You can follow all my training on dailymile (I have a widget on the sidebar)
Finish War & Peace: I'm still reading. I have less than 500 pages to go and a few days to finish. I'm hoping to wrap this up mid-month. I have now checked this out from the library 4 times....
Send out wedding save the dates: DONE!
Make some progress on baby Gwen's blanket: About halfway. I didn't have as much time to work on this during March as I would have liked, but it'll get done in April. 

Here is a little update on the rest of my goals for 2013:

- Spend time in the word and prayer more

Thanks to some amazing She Reads Truth plans for Lent and Holy Week, this has been easy. Our small group also started back up and I'm feeling very encouraged and blessed by the things I'm reading in the Bible. I think this is the first time in my life that I really WANT to read the Bible. All of it. Over and over. I want to be one of those people that can relate real-life scenarios to a Bible story.

I've been trying to pray more often and more effectively. She Reads Truth plan for post- Easter is all about prayer and I'm learning so much! Mornings with devotions and prayer has really become a special time for me.

- Stop over committing (rule of 2)

This has been pretty easy. I think I'm getting better at saying 'no' and not having a license sort of makes it impossible to do just do whatever, whenever. I'm really, really, looking forward to tax season being over so I can spend time reading and sitting on my patio writing.

- Get simple (fashion & spending fast)

I broke down.
I forgot I scheduled a Stitch Fix box for the last week of March as a reward for not buying anything for the first quarter. This was before I decided to not buy for the whole year.
Of the 5 things, there were 2 shirts I really liked.
So I caved.



See? how could I resist? I'm calling it an early birthday present and I made myself get rid of 4 shirts as penance. #balance

As for other spending, we booked a trip for our birthdays and I hired a painter for my house...so yeah. I see the trip as a good investment and treat for us. We are seeing one of our favorite bands and visiting lots of friends. It will be a really good time and probably the only trip we take this year. Also- we paid cash for it with bonus/tax money so I didn't charge anything.

- Eat (mostly) vegan

I think I've mentioned more than once how my sugar habit is out.of.control.
Jami did a #whole30 and is now all hatin' on sugar. Like the sugar police.
(I kid, I kid. She's awesome and I live close enough to her we could be real life friends. That may just happen.)
But anyway- it inspired me to be more mindful about my sugar intake and QUIT FEEDING MY FACE WITH DESSERT.

Seriously.

I haven't broke myself of the chai or the latte (I love that creamy spiciness), but I do sugar free when I can and I'm considering a pre-30 years old 30 day clean up of me. In honor of getting old.

At this point, I'm picking one day a week that I get a treat on. This varies because things come up. Last night I had this.


I split it with T and it has vegetables in it so it basically doesn't count and makes up for the vegan peanut butter cup I had on Monday.
Right?

Obviously, I have work to do here.

- Give priorities priority (more family, regular volunteering, scheduled write sessions)

I got to spend a lot of time with family this month.



Maybe it doesn't seem like a lot but we aren't the 'see each other every week' kind of family, so a birthday dinner, Easter celebration and whole day with my nieces was a special treat.

Volunteering is going great. I love, love, love serving food to my people downtown.
I'm actually signing up for more days and hoping that I can get to know each one of them a little better.

My scheduled writing sessions have been damnear impossible during tax season, but I expect that to change very soon.
I can't wait.

- Rest in the big picture

You know, T and I have had so many talks about our upcoming marriage and what our future will look like. I was dealing with my old house this month (finding a renter which came through- seriously, Praise Jesus) and we had a serious discussion about our future living arrangement and fears with being in such close quarters together.
We love each other. A lot. But we also love our alone time. It was good to admit that and talk through all those things we might be feeling a little nervous about. And also, to remember that we get to be married. To each other.
It's pretty exciting stuff.
Our future is so bright and the big picture in front of us is an adventure I can't wait to start.

Goals for April:
-#imoversugar: Give this a real shot. No excuses
- Finish War & Peace: i swear. this time. for real. I WILL FINISH.
- Blanket: It's going to be too warm for blankets by the time I finish if it's not April. So this one is getting top priority.
- RELAX#restisbest Tax season is coming to a close. Bike season is starting. Taco Tuesdays!! Yesssssss.

Sunday Seven: 4/7/2013

Even though I had to work almost all weekend....



I didn't let it get me down.
It was absolutely beautiful!!

1. If you follow me on Instagram, you probably saw a barrage of pictures Saturday starting with 1st shorts and tshirt run of the season!


 It was awesome. I got in 8 miles with my girlfriends before I set off for breakfast with this guy before work:


He's my favorite. <3

2. Also, I know not that many people care, but our teams played each other in the NIT tournament this week.

 The Hawks prevailed, but then we lost the championship. Bummer.

3. I'm sort of obsessed with eating everything out of a mason jar.

5. I've read Andie's blog for a couple years and I revisited it this week looking for a recipe. These posts: losing your fear of food and being constantly hungry, definitely gave me some food for thought. (pun intended). I yo-yo with food and it's about time I strike a healthy balance.
